Vegan Rumble Banana Bread That Will Blow Your Mind

This Rumble Cacao Banana Bread is SO good, you’ll have no idea it’s vegan! The additional plant-based protein, coconut cream, Omega 3's, and chocolatey flavour from Rumble Cacao give the loaf perfect texture and richness. 

Easily made in one bowl, this recipe comes together quickly, with ingredients you probably already have in the kitchen. The only challenge? Sharing!

Ingredients

  • 2 large, very ripe bananas
  • ¼ cup maple syrup
  • ¼ cup canola oil
  • ¾ cup of Plant-Based Rumble Supershake Cacao (half a bottle)
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 1 cup of chopped walnuts, chocolate chips, or chopped pecans.
  • Sprinkle of brown sugar (for topping)

 

Directions

Preheat oven to 350 degrees, and lightly oil a 9-inch loaf pan. Line the bottom and ends of the pan with parchment paper. 

Peel and mash the bananas in a large bowl. Mix in the maple syrup, oil, Rumble, and vanilla extract. Add the two flours, baking soda, cinnamon, and salt, and gently combine. Don’t overmix! Fold in your nuts or chocolate chips, then spoon into the prepared loaf pan. Sprinkle the top with brown sugar.

Bake for 50 minutes, then let cool for 10-15 minutes in the pan before moving the loaf to a cooling rack.

When divided into 12 slices, each slice of banana bread (with added chocolate chips) contains approximately 232 calories, 4.4 grams of protein, 9.6 grams of fat, 2.8 grams of fibre, and 14 grams of sugar.
