INGREDIENTS
Enough to make about 15 1"-1.5" balls.
- 1 and 1/3 cups of rolled oats, ground into a rough flour (or ready-made oat flour or almond flour)
- 1/3 cup peanut butter or other nut butter
- 1 tablespoon maple syrup
- 2 tablespoons cocoa powder
- ¼ cup of unsweetened shredded coconut
- 1 tablespoon chia seeds
- 1/2 cup Rumble Dutch Cocoa (about a third of a carton)
- ⅓ cup chopped chocolate chips
Optional: 1-2 tablespoon of mixed ground rolled oats, cocoa powder, and shredded coconut for dusting
DIRECTIONS
Grind up your rolled oats in a food processor, grinder, or immersion blender, until they make a rough flour. Combine with peanut butter, maple syrup, cocoa powder, coconut, chia seeds, and Rumble Dutch Cocoa. Your dough should be thick and sticky enough to shape into balls. Add more flour if the dough is too wet.
Roll the dough into balls about 1"-1.5" in size, and place on a baking sheet. Put the sheet in the freezer for 20-30 minutes (this helps the bites keep their shape). Once chilled, dust with a mix of ground rolled oats, shredded coconut, and a pinch of cocoa powder, and store in a fridge or freezer-safe container.
Each bite contains approximately 88 calories, 3 grams of protein, 5.5 grams of fat, 1.5 grams of fibre, and 3.5 grams of sugar.
