Super Good Vegan Latte Protein Power Balls

If you’re craving a coffee-forward snack with a side of oaty, chocolatey, and nut buttery goodness, you’ve got to give these a try. Not only are these vegan Rumble Latte protein balls delicious, but they’re high in protein, fibre, and healthy fats, with a satisfying touch of sweetness.
Recipe makes about 12 power balls.
Ingredients:
1 and ⅓ cup of rolled oats, roughly ground - plus more for dusting
1/3 cup peanut butter or other nut butter
1 tablespoon maple syrup
1/4 cup of unsweetened shredded coconut
1 tablespoon chia seeds
1 tsp cinnamon
1/2 cup Rumble Latte (about a third of a bottle)
1/3 cup chopped chocolate chips
Directions:
Combine all ingredients in a bowl, and mix well.
If the dough is too wet, slow add additional ground oats until it’s easy to roll into balls. If it’s not sticky enough, add a bit more peanut butter.
Roll dough into small balls, about 1.5 inches in diameter. Dump a couple tablespoons of additional ground oats on a small plate, and roll the balls through the oats to give them a light dusting. Place the balls on a plate or tray, and refrigerate for at least an hour, until firm and chilled. Freeze or store in an air-tight container in the fridge for up to a week (if you don’t eat them all first!).
Each power ball contains about 127 calories, 4 grams of protein, 7.5 grams of fat, 2.5 grams of fibre, 3.9 grams of sugars, and 2.4mg of caffeine.
