The Double Chocolate Rumble Zucchini Loaf You Never Knew You Needed

You’d never know this rich and decadent loaf contains a whole carton of Dutch Cocoa Rumble, and an entire medium zucchini! This recipe makes a loaf so delicious, you could ice it and call it birthday cake. But with maple syrup, spelt flour, olive oil, and Rumble’s 20 grams of protein, it’s healthier than it has any right to be.

Ingredients

1 1/2 cup spelt or whole wheat flour

1/3 cup cocoa powder

3/4 tsp baking powder

1/2 tsp baking soda

1/4 tsp of salt

1/3 cup maple syrup

1 cup finely grated zucchini, packed and drained of excess liquid

1 Dutch Cocoa Rumble

1/4 cup olive oil

1 tsp pure vanilla extract

1/3 cup mini or regular chocolate chips, optional

Directions

Preheat oven to 350 degrees. Grease a loaf pan. Whisk together dry ingredients, then add remaining ingredients and stir to combine. Pour batter into your pan, and top with sprinkled chocolate chips. Bake for 40-50 minutes, or until an inserted toothpick or knife comes out fairly clean. Let cool before serving.
