Treat Yourself with Rumble Chocolate Peanut Butter Brownies

Loaded with protein, fibre, healthy fats, whole grain flour and peanut buttery goodness, these brownies have energy for days. They're also perfect for making ahead and storing in your freezer for impromptu snacking. 

Ingredients

For the peanut butter batter:

3/4 cup peanut butter

1/4 cup maple syrup

1 large egg

1/4 teaspoon vanilla extract

Few pinches of folky or coarse salt

 

For the chocolate batter:

1 Rumble dutch cocoa

1/4 cup of vegetable oil

1/4 cup of maple syrup

2 large eggs

1/2 cup of cocoa powder

1 teaspoon vanilla extract

1/2 tsp salt

1/2 tsp baking powder

1/2 tsp baking soda

2 cups of whole wheat or spelt flour

Chocolate chips to sprinkle on top

Directions

Preheat oven to 350 degrees.

Line an 8-inch baking pan with parchment paper, and oil the sides of the pan.

In a medium bowl, whisk together all the ingredients for the peanut butter batter until smooth. Set aside.

In a second bowl, whisk together Rumble with vegetable oil, maple syrup and eggs. Add in remaining ingredients (excluding chocolate chips) and stir into a batter. 

Cover the bottom of your pan with the chocolate batter, and cover with dollops of the peanut butter batter. Pour remaining chocolate batter on top. Stir or swirl with a butter knife to evenly distribute the chunks of peanut butter batter throughout the pan. 

Sprinkle chocolate chips on top.

Bake for 30 minutes, or until an inserted toothpick comes out clean.
